¼ cup olive oil

2 garlic cloves (minced)

1 tsp salt

½ tsp (or more, according to taste) freshly ground pepper

Medium head of cauliflower (cut into1/2 inch thick slabs and halved to make 8)

115 g golden raisins, 1 tsp crushed almonds, 55g shelled pistachios,

8 slices of sourdough bread ½ inch thick

115g Manchego or Pecorino cheese, cut into 8 slices

2 tbsp chopped parsley
