Preheat the oven to 180C / 350F. Line a baking tin with parchment paper. In a medium bowl, combine the oil, garlic, salt and pepper. Toss the cauliflower slabs in and coat with the oil, garlic salt and pepper mixture. On the prepared baking sheet, arrange the cauliflower and bake for 25 minutes. Flip the slabs and cook for 10 -20 minutes, till the cauliflower is softened and roasted. Set aside to cool but do not turn off the oven.
While you’re baking, soak the raisins in water for 10 minutes. Drain. In a small pan, toast the pistachios and almonds on a medium high heat (with a little oil or dry, your choice). After it’s cooled, chop the pistachios.
Now lay the bread on the baking sheet and spread the cauliflower on the bread, cutting it to fit as needed. Sprinkle with the raisins and almonds and pistachios and top with the cheese slices. Bake for 10 minutes (or till the cheese melts).
Top the cauliflower melts with the chopped parsley and serve.Hergossip
